A couple of nights ago I experimented with making Tikka Masala Curry Chicken and let me tell you it was amazing! Sure the sauce came out of a jar and wasn’t homemade but hey I dont’ have a lot of time in the day to make homemade Tikka Masala Sauce even though Jamie Oliver’s version looked outrageously good.

Started by adding my defrosted chicken breasts to a saucepan of olive oil over medium heat for about 15 min (flipping midway through)

Then I chopped up some green pepper, onion, and garlic and added it to the chicken and let them get soft and smelling great. Added the Tikka Masala Curry Sauce and let simmer for about 15 min (while I got the Little One ready and situated with milk sippy cup in hand)

Delicious!

Would have been great with some brown rice and naan! but I didn’t have any on hand.

Since I already had the cutting board and our kitchen composter out I decided to chop up some more veggies for the days ahead. I love to do this so I don’t have to pull out all that stuff every night so I can just get it all over with in one week. I also had a little helper who thought all the bowls, pots and containers needed some organizing

Diced some celery and carrots and put into two separate containers. One  small batch to add into tuna for lunches and the other for a veggie stir fry I am planning for tonight. (p.s do you see how much counter space I’m working with in this house….yeah)

Mmmmmm…..brownie!! So good!

I love the way she relaxes lol

The smells of baked brownies and spaghetti is a surprisingly great mingle of scents

Spaghetti

1 huge container of Prego
1 lb. ground beef
1 tbsp. garlic salt
3 tbsp, sugar.
1 lb. whole wheat spaghetti noodles

Cook pasta according to directions. Brown ground beef, drain the grease, pour in spaghetti sauce, mix, add garlic salt and sugar. Let simmer until noodles are done. Pour drained noodles into sauce. Mix and Eat Up!!

 

 

The Missing Halo

My parents came down to spend Halloween with us. Little Miette was an Angel with a wardobe malfunction. But first I have to share the cutest outfit our little one wore to church yesterday mornin. The rooster shirt/dress and baby Gap Skinny Jeans we got from the most adorable shop in carytown called Clover. You can check out a post by John over on YoungHouseLove and see pics of it!

Then Chaos ensued upon us.

Miette and I started the day out right by splitting a bowl of s’more oatmeal!

S’more Oatmeal

Included the oatmeal cooked as we liked it and added half a cinnamon graham cracker and small spoonful of marshmallow fluff and a small spoonful of nutella.

I also had half of some yogurt I picked up at Target yesterday.

Then we headed outside on the porch to play on freshly fallen leaves

Today we have cleaning on our mind because my family is coming to Richmond to spend Halloween with us so much to do!

I loved the Rocky Horror Episode of Glee!! Super Awesome!

I watched it before cooking up some pasta for dinner tonight. On the Menu was Spicy Alfredo Pasta

Spicy Alfredo Pasta

1 lb. penne pasta
1 jar alfredo
1 can diced tomato
1 tsp. italian seasoning
1 tsp. crushed red pepper flakes
Fresh Shredded Parmesan Cheese

Boil pasta according to package directions. Meanwhile, in a medium saucepan on medium-low heat add alfredo sauce and diced tomatoes. Once hot, lower temp to simmer and add seasoning and flakes. Stir occasionally. After pasta is cooked, add to bowl and spoon sauce over top and add parmesan cheese on top.

Yesterday Miette and I practiced our trick or treating. It went well at first…..before she became bored knocking on our door with noone answering

 

 

PB&J Foodie Post

But my bro and sis’s did.

I was reminded of that today while I was making lunch which of course was……ta-da! PB&J!!

Miette’s included a side of last nights BBQ chicken she didn’t finish. For my PB&J I do the usual nothing special, nothing organic but for her’s she gets the TJ’s Jelly she loves so much

She also eats hers by ripping it apart to get at the jelly which she picks and eats first and formost

Cutest Darn Things Ever

I love seeing pumpkins when I step out the door in the mornings for my run

I love to see the leaves all over the front lawn, though I do not want to rake them! Earlier this year it took us weeks to rake up our “lawn” and we still didn’t finish. It was about 5 inches of leaves on the ground and it was so hard. We were going to attempt to grow grass but neither Daddy or I have that motivated green thumb to actually take the time and do it. But hey, maybe some will grow next year.

Today I am hitting up the computer to some research for some races to run next year so I can get start training and get more motivated than I am currently.
