Its Twas A Success!!

Wow I am super excited about tonight’s dinner! I cooked up spaghetti squash and added some topping and Miette ate two servings!! Of Veggies!! Of All Veggies! That’s got to be a first. The winning combo right here  



Spaghetti Squash Pasta

* 1 Spaghetti Squash
*2 can’s diced tomatoes
*1 cup spinach
*2 tsp. garlic cloves
*Pinch of sugar
*1 tsp. garlic salt

Preheat oven to 450. Cut squash in half. Cut out core and seeds. Place face down on baking sheet lined with some water. Bake 45 min. Meanwhile, in saucepan with lid, place thin layer of extra virgin olive oil until hot then add garlic cloves. Add diced tomatoes and spinach, put lid on and let cook for 10 min. After squash is cooked enough, let cool then scrap it with a fork to get longish ribbons. Put healthy serving on a plate. Before adding tomato mixture put a pinch of sugar and garlic salt and mix. Let simmer for a few more minutes then add to top of squash. Viola!  

It was delicious! Afterwards Ian took Miette out for a bike ride for which I am extremely jealous. My stomach was still topsy turvy so I opted out.  



Speaking of bikes, we bought a standing bike rack from Rowlett’s Bicycle in Richmond and put it up in our living room. Both of us hated trudging the bikes through the house (were both pretty anal about them being outside because of rust and all the good stuff) so we put it right by the door. Yea, you may get a face full of tire once you walk in but after a few visits you’ll get used to it.
